3 tablespoons finely chopped dark chocolate
2 1/2 tablespoons butter
2 1/2 tablespoons sugar
1 chia egg (1 tablespoon chia, 3 tablespoons water)
2 tablespoons flour
1 teaspoon chia seeds
2 tablespoons chopped fresh mint
8 crushed raspberries
Stir together 1 tablespoon chia seeds and 3 tablespoons water, let sit for 15 minutes
In a double boiler melt and blend chocolate and butter. Remove from heat. Beat in sugar and chia egg until fully mixed. Combine flour and additional dry chia seeds until smooth. Poor into mug and microwave for 1 minute.
Cool, and garnish with mint and raspberries.
